Cook rice as normal, but add Sunny Caribbee dry jerk seasoning while cooking. To start with, try about 2 tablespoons per half cup of rice.

This dish is especially good if you use chicken broth, substituing it for water when you cook the rice.

Feel free to add other ingredients to this as well.  Chopped onions, scallions, shallots, garlic, whole corn kernels....   Be imaginative!

I suppose you could substitute another dried jerk seasoning for the Sunny Caribbee, but we highly recommend the Sunny Caribbee.  You can order it online by clicking here. You want the dry jerk spice that comes in a tin. If you are in Tortola, you can buy it in one-pound bags at the Sunny Caribbee shop.
