Method:

  1. If using bamboo skewers, soak them in cold water for at least 1 hour. This will prevent them from burning when grilled.

  2. To prepare the marinade: Whisk together the lime juice, tequila, garlic, shallots, cumin, salt, and pepper. Slowly add the olive oil, whisking until combined. Taste for seasoning.

  3. Pour over the peeled shrimp and marinate for at least 1/2 to 1 hour.

  4. Thread the shrimp on skewers (6 to 7 to each skewer).

  5. Lightly sprinkle Sunny Caribbee jerk seasoning over skewered marinated shrimp.

  6. Grill shrimp on hot grill for about 90 seconds on each side. The shrimp are done as soon as they are translucent. Do not overcook!

I suppose you could substitute another dried jerk seasoning for the Sunny Caribbee, but we highly recommend the Sunny Caribbee.  You can order it online by clicking here. You want the dry jerk spice that comes in a tin. If you are in Tortola, you can buy it in one-pound bags at the Sunny Caribbee shop.
