1. Slice conch into 1/4 inch thick slices and cook with 1 cup water in a pressure cooker for 12 minutes. Save the liquid after cooking. Dice cooked conch.

  2. Mix all ingredients in saucepan. Simmer over medium low until reduced to a thickened consistency.

  3. Add salt, pepper, and hot sauce to taste.
